These cookies are extra special because the recipe comes from an amazing friend I met here on the islands. She gave me a bunch of fun vegan recipes that I have been loving ever since!

RECIPE

INGREDIENTS:

- 8 TBS COCONUT OIL

- 3/4 CUP ORGANIC SUGAR 

- 1/2 BANANA

- 2 CUPS ORGANIC FLOUR

- 1 TSP BAKING POWDER

- 2 TBS CORN STARCH

- 1 TBS CINNAMON

- 1 TSP NUTMEG

- 1 TSP CLOVE

 

INSTRUCTIONS:

- CREAM TOGETHER COCONUT OIL AND SUGAR

- ADD CINNAMON,  NUTMEG AND CLOVE TO THE OIL AND SUGAR

- MIX TOGETHER BANANA AND CORNSTARCH THEN ADD TO OVER ALL MIXTURE

- ADD SIFTED FLOUR AND BAKING POWDER TO THE CREAMED MIXTURE

- ROLL BALLS, PRESS FLAT WITH FORK ON TO GREASED TRAY

- COOK AT 360 DEGREES FARENHEIGHT FOR 12 MINUTES

These amazing raw vegan bites are the perfect snack for absolutely ANY time of the day! Morning, afternoon, night; they are constantly satisfying my sweet tooth. Since these babies are raw, I have no issue mixing them with smoothies. They will digest at essentially the same rate. 

Food combining is something a lot of my clients are unaware of, yet it is something you definitely need to take into consideration if you are looking to perfect your digestion. Combining things like raw fruits and cooked foods will never result in perfectly digested meals. This is due to the high water + fiber content found in raw fruits - which actually makes them digest 10x faster than anything that is cooked!

For an added touch, when you're finished throw some extra shredded coconut or oats on!! Gives them a little character. XO

RECIPE

PREP TIME: 5 MINUTES                      YIELDS: 

INGREDIENTS:

- 1 1/2 CUP RAW GLUTEN FREE ROLLED OATS

- 10 DATES

- 1/2 CUP SHREDDED COCONUT

- 1/2 CUP ORGANIC RAW MAPLE SYRUP

- 1 TBS SUNFOOD CACAO

- 1 TBS SUNFOOD CAROB

INSTRUCTIONS:

- BLEND ALL INGREDIENTS IN FOOD PROCESSOR OR HIGH SPEED BLENDER (STOPPING AND MIXING WHEN NECESSARY)

- TAKE OUT 1 TBS OF MIXTURE AND ROLL INTO BITE SIZE ENERGY BALLS // REPEAT UNTIL BATTER IS GONE

- REFRIGERATE FOR 1 HOUR + ENJOY!

Simple + Delicious. This dish is my "lazy meal." I was completely out of groceries and really didn't feel like going to the store, so this funky plate is what I came up with! Now it's one of my go-to's!

RECIPE

PREP TIME: 10 MINUTES                                             YIELDS: 1

INGREDIENTS:

- 2 STEAMED SWEET POTATOES

- ONE CUP STEAMED BROCCOLI

- 1/2 CUP ORGANIC CILANTRO, CHOPPED

- 1/4 CUP ORGANIC GREEN ONION, CHOPPED

- 1 CAN CHICKPEAS, DRAINED AND RINSED

- 1 TSP CUMIN

- 1 TSP GARLIC POWDER

- 1 TSP BLACK PEPPER

- 1 TBS NUTRITIONAL FLAKES

- 1/2 TSP PINK SALT

 

INSTRUCTIONS:

- ADD ALL INGREDIENTS TO LARGE BOWL AND MIX WELL (MASHING SWEET POTATO AND BROCCOLI) 

- ENJOY IN SOME ROMAINE BOATS!

THESE. An absolute must. That is all. 

Side note: I don't typically cook with or use peanuts in any of my recipes. I have done extensive research and testing and have found that peanuts in particular are abundant in aflatoxins, produced by the mold they are essentially grown in; Aspergillus flavus. These mold spores have shown to be directly related to liver cancer and lung damage. This is why I always go for almonds, leaving my peanuts and peanut butter consumption to an all time minimum!!!

RECIPE

PREP TIME: 20 MINUTES                              YIELDS: 2

INGREDIENTS:

BASE:

- 3/4 cup raw almonds, ground into a meal
- 1/4 cup rolled oats, ground into a flour
- 1.5 tablespoons coconut oil, warmed if solid
- 1.5 tablespoons pure maple syrup
- 1/4 teaspoon cinnamon 

- 1/4 teaspoon pure vanilla extract 

- pinch of fine grain sea salt

TOP:

- 3 tablespoons coconut oil
- 3 tablespoons pure maple syrup 

- 2 tablespoons cacao powder
- pinch of fine grain sea salt

 

INSTRUCTIONS:

- Add almonds and oats into a high-speed blender and blend on high until a flour forms. 

-Dump into a large bowl and break up any clumps with your fingers.
- Add coconut oil, maple syrup , cinnamon, vanilla, and salt into the bowl. Stir until thoroughly combined. The dough should be fairly sticky like cookie dough.
- Line a mini (or regular) muffin tin with paper liners or use a silicone muffin holder. Portion the dough into each muffin cup and press down until even and smooth. (Also works In any dish lined with parchment paper.)
- To make the chocolate sauce: Whisk together the coconut oil, maple syrup, cacao powder, and salt until no clumps remain. Spoon the sauce over top each of the cups, distributing evenly.

- Garnish with shredded coconut  

- Place in the freezer in a flat area for 30-45 minutes, until firm. 

- Take them out and enjoy right out of the freezer!

I have serious heart eyes for hummus. It is one of my favorite salad toppings. I would make it daily for lunch and dinner if that was acceptable...wait, who am I kidding? I basically do. 

This oil-free, salt-free hummus recipe is a whole new world for your body - as compared to store bought hummus. Pre-prepared and packaged hummus is typically always filled with preservatives, unhealthy fatty oils,  + white salt (aka the devil.) In order to package any type of dip, there are chemicals needed to preserve freshness and color. These ingredients + preservatives are all extremely detrimental to our health in their own separate ways. Mostly all reeking havoc on the body's kidneys and liver. Ditch the pre-made dips and make your own! Simple, quick, and just as delicious! 

PREP TIME: 5 minutes                        YIELDS: 2

INGREDIENTS:

- 1 CAN ORGANIC CHICKPEAS

- 1 TSP BLACK PEPPER
- 2 TBS WATER
- 1 TBS APPLE CIDER VINEGAR
- 1 TSP ORGANIC CUMIN
- 1/2 LEMON (JUICED)
- 1/2 TBS BRAGGS LIQUID AMINOS (OR ANY GLUTEN FREE SOY SAUCE)

 

INSTRUCTIONS:

- BLEND ALL INGREDIENTS WELL IN VITAMIX OR FOOD PROCESSOR + ENJOY!

So by popular demand, I had to add my recipe to my mint chocolate chip nice cream here. This is by far one of my favorite concoctions to date! Besides the raw vegan cookie dough..but that's coming soon, I promise! Anyways, you guys will NEVER guess the secret ingredient that makes my nice cream so green....ready for it?! 

Spirulina!! Yup, how gross does that sound? But this nice cream actually still tastes phenomenal! Some facts about Spirulina; Spirulina is a type of blue-green algae that grows naturally in oceans and salty lakes in subtropical climates. Yeah, its essentially pond scum. But this "pond scum" has been used for centuries because of its powerful healing effects on the human body.

According to National Institute of Health, spirulina may treat metabolism and heart health issues, including weight loss, diabetes and high cholesterol. People have also recommended Spirulina as an aid for a variety of different mental and emotional disorders, including anxiety, stress, depression and attention deficit-hyperactivity disorder. Spirulina is also abundant in antioxidants, which are known to fight free radicals that aid in the formation of cancer cells. This nutrient dense food is packed with protein and omegas, it's no wonder the Aztecs used to harvest it so often!

INSTRUCTIONS:

- BLEND FROZEN BANANAS, SPIRULINA, AND MINT EXTRACT IN VITAMIX OR FOOD PROCESSOR UNTIL SMOOTH! DO NOT ADD WATER! YOU MAY NEED TO STOP AND MIX.

- ADD CACAO NIBS + FRESH MINT ON TOP + ENJOY!

As opposed to gatorade, datorade actually has an abundant amount of fiber and nutrition! And in my opinion, tastes WAY better. Ditch the highly processed and refined gatorade and make the real stuff! This creamy treat has no added chemicals or man made synthetic sugars. Just the goods. 

Datorade is one of my favorite pick-me-ups! It tastes exactly like a milkshake, but without the pus + fluids from a deceased, tortured animal. The best part about this gorgeous drink?, it's sooooo simple to make! Just two ingredients! Ready?!

Dinner Party? Don't know what to bring? These are the perfect healthy alternative to greasy fried chicken wings that are slathered in unwanted oils. These cauliflower wings are completely vegan. They are a fun appetizer that meat eaters, vegans, vegetarians, and so on can all enjoy. 

RECIPE

PREP TIME: 15 MINUTES                 YIELDS: FULL PARTY (APPETIZER)

INGREDIENTS: 
- 1 HEAD CAULIFLOWER, CHOPPED
- 1/2 HEAD CELERY, JULIENNED
- 3 LARGE CARROTS, JULIENNED
- 1 CUP RICE FLOUR
- 1 1/2 CUP COCONUT MILK
- 1/4 CUP FRANKS HOT SAUCE
- 1 TSP GARLIC POWDER
- 1/2 TSP BLACK PEPPER
- VEGANAISE (OPTIONAL)

INSTRUCTIONS:
- ADD RICE FLOUR, GARLIC, PEPPER, COCONUT MILK AND FRANKS HOT SAUCE TO MIXING BOWL. MIX WELL (SHOULD BE A THICKER CONSISTENCY) 
- COMPLETELY DRENCH CAULIFLOWER IN SAUCE, REPEAT UNTIL ALL CAULIFLOWER WINGS ARE COVERED
- PLACE CAULIFLOWER ON PARCHMENT PAPER LINES BAKING TRAY AND ADD A DRIZZLE OF FRANKS HOT SAUCE ON TOP OF WINGS
- PLACE IN OVER ON 400 DEGREES, FLIPPING EACH 20 MINIUTES UNTIL CRISPY
- TAKE OUT AND SERVE WITH VEGANAISE, CARROTS AND CELERY!T

I still salivate every time I look at this photo! That's how amazing these vegan and gluten free banana pancakes were! This was my first time experimenting with vegan pancakes (surprisingly) and they actually came out great!

 

RECIPE:

PREP TIME: 5 MINUTES                                   YEILDS: 3                                   COOKING TIME: 40 MINUTES (WHOLE BATCH)

 

INGREDIENTS:

- 2 CUPS GLUTEN FREE FLOUR

- 2 MASHED BANANAS

- 1 SCOOP VANILLA SUNWARRIOR OR SUNFOOD PROTEIN (OPTIONAL)

- 4 CUPS COCONUT MILK ( IF USING CANNED,  BLEND 1 CAN 

COCONUT MILK TO 2 CANS WATER FOR RIGHT CONSISTENCY)

- 1 TSP CINNAMON (OPTIONAL)

- COCONUT OIL (FOR PAN COATING)

 

INSTRUCTIONS:

- TURN STOVE ON MEDIUM HEAT, COAT FLAT PAN WITH SMALL AMOUNT OF COCONUT OIL 

- MIX ALL INGREDIENTS (EXCEPT FOR COCONUT OIL) IN LARGE BOWL UNTIL SMOOTH WITH NO CHUNKS (ADD MORE COCONUT MILK OR FLOUR AS NEEDED)

- POUR EVEN SIZE CIRCLES ON PAN (LEAVE ENOUGH ROOM TO FLIP

- ONCE BUBBLES START FORMING ON THE BATTER, FLIP THE PANCAKE OVER

- AFTER 3 MINUTES, CHECK BOTTOM SIDE. PANCAKE IS FINISHED ONCE BOTH SIDES ARE GOLDEN BROWN

Of course I couldn't only pick one recipe to share with you guys on (fries)day! So I decided to add my simple recipe for regular oil free, salt free fries on this page as well. These fries are another favorite of mine! And by favorite I mean I make them every night. With no frying necessary, and no added fat or salt, these babies are the healthy version of french fries!!! 


RECIPE:

PREP TIME: 10 MINUTES

INGREDIENTS:

- 5 LARGE BAKING POTATOES

- 2 TSP BLACK PEPPER

- 1 TSP CUMIN

- PREHEAT OVEN TO 375 DEGREES FAHRENHEIT

- CHOP POTATOES INTO FRIE-LIKE STRIPS

- ADD TO BIG BOWL AND TOSS WITH SEASONING

- LINE POTATO FRIES ONTO PARCHMENT LINED OVEN SAFE TRAY

- BAKE FOR 45 MINUTES, FLIPPING EVERY 15 MINUTES

When my friend Megan came over and showed me an extremely easy to make meat-less burger, I fell in love. Now if you know me, you know I don't do well with following recipes (funny that that is the case, yet I am sitting here writing you all of my "recipes.") I guess it's a good thing, because then I come up with some fun twists and turns. That being said, this burger I made is a twist on what Megan and I made. With some ingredients essentially the same, some completely different. Thats what makes this FUN, right?

Needless to say, this burger is an absolute must. Its such a staple in my dinners now and I love it. I am obsessed with coming up with fun and new recipes to enjoy with the ones I love. Plus, I know my boyfriend would get extremely tired of my usual potatoes for dinner every night. Time to switch it up!


RECIPE:


PREP TIME: 35 MINUTES                  YIELDS: 8 BURGERS               COOKING TIME: 35 MINUTES


INGREDIENTS:

BURGERS:

- 1 CAN BLACK BEANS, DRAINED + RINSED

- 5 SWEET POTATOES, CHOPPED + BOILED

- 1 CUP STEAMED BROWN RICE

- 3/4 CUP CHOPPED GREEN ONION

- 1/2 CUP RICE FLOUR

- 1 TSP BLACK PEPPER

- 1 TSP CUMIN

- 1/2 CLOVE GARLIC, MINCED


TOPPINGS:

- AVOCADO, SLICED

- TOMATO, SLICED

- RED ONION, SLICED

- SPROUTS

- HOMEMADE KETCHUP

- VEGANAISE 


INSTRUCTIONS:

- PREHEAT OVEN TO 375 DEGREES FAHRENHEIT

Ugh, nana nice cream. You have my heart. But really! I am such a sucker for this simple meal. I love to make it pretty, and then inhale it in under 2 minutes. Completely Gluten + Dairy Free! Packed with tons of vitamins, and lots and lots of potassium.

Potassium maintains the electrolyte balance in your body's cells, manages your blood pressure, which keeps your heart functioning properly, as well as plays a role in enhancing the growth and health of your cells. This amazing nutrient also releases energy from protein, fat and carbohydrates during the metabolic process, increases your muscle control and promotes efficient cognitive functioning by helping to deliver oxygen to the brain.

-ONCE FINISHED, TAKE OUT THIS MIXTURE AND FREEZE

SECOND LAYER:
- USING A HIGH SPEED BLENDER OR FOOD PROCESSOR, BLEND 3 FROZEN BANANAS + FROZEN BERRIES, WITH ABSOLUTELY NO WATER! (YOU MAY HAVE TO STOP/ MIX/ BEAT/ UNTIL FULLY BLENDED)

One thing I wanted to touch upon is the cheese I used. It is from a brand called "Follow Your Heart." This is important because their "kraft american singles" are made with coconut oil instead of canola oil! Very important! Canola oil and many other vegetable oils are typically always GMO (genetically modified organisms). Along with the fact that they are essentially man made, under-going a hydrogenation process which leads them to contain trans-fatty acids. Trans fats have no place in our bodies. They are extremely hazardous. These fatty acids drive up your LDL (bad cholesterol), increasing your risk for coronary artery disease + stroke. Please always consider the ingredients and oils in the process of creating your yummy meals and eating out!!! They play a huge role in your health!!

- 2 PIECES OF SPROUTED EZEKIAL BREAD

- 2 SLICES OF FOLLOW YOUR HEART AMERICAN SINGLES

- 1 TBS COCONUT OIL

- MELT COCONUT OIL IN STAINLESS STEEL PAN ON MEDIUM-HIGH HEAT

- CREATE SANDWICH WITH EZEKIAL BREAD + AMERICAN SINGLES

- ONCE PAN IS HOT, PLACE SANDWICH IN, FLIPPING EVERY 3 MINUTES

- ONCE BOTH SIDES HAVE A GOLDEN CRISP, REMOVE + ENJOY!

Smoothie bowls are some of my most favorite creations. These meals give me the energy I need and the nutrition I desire! All fruits are packed with tons of water and fiber, making them naturally extremely hydrating. This increases your digestion, which is the basis of all health.

If you do not include smoothie bowls as part of your daily routine, I recommend incorporating them! Your body WILL benefit from all of the vitamins and minerals found in these lovely treats! Plus, they taste amazing! Here's only one of my many smoothie bowl creations!

THESE. One of my all time favorite dinners are my oil free, salt free, sweet potato fries dipped in guac. I aim to keep all of my recipes super simple, because I am pretty much just always too hungry to make some extravagant meal. That being said, these are simple and delicious! Make sure you mash some avocado, black pepper + lemon in a bowl and enjoy on the side as a dipping sauce!!

- TOSS POTATOES IN LARGE BOWL WITH SEASONING

- PLACE POTATOES ON PARCHMENT LINED OVEN SAFE TRAY

- BAKE ON 350 FOR 45 MINUTES, FLIPPING IN BETWEEN

- TAKE OUT WHEN CRISP ON THE OUTSIDE, YET SOFT ON THE INSIDE &ENJOY!!
